On Christmas day, I made Chocolate Maca muffins. Moist, delicious, chocolate muffins that are wonderful in the morning or to enjoy in the afternoon with tea. My favourite way is served warm with a touch of ghee and some herbal tea. In this recipe, I used Maca and Cacao, two superfoods that compliment each other really nicely.

One of my favorite ways to spend my time is to meet up with friends to enjoy picnics and walks in nature while catching up on our week’s events. Near our home, we have the loveliest trail that is 9KM long surrounded by magnificent scenery. I’ve always loved mango lassi, a traditional Indian yogurt-based drink made with yogurt, spices and mango pulp. Sometimes honey is added to the mixture for some extra sweetness and sometimes vanilla bean paste to enhance the fragrance of the drink. I wanted to turn one of my favourite drinks into a raw cake that is as flavourful and delightful as the traditional Indian drink.

Have you ever heard someone say that they were on vacation and tasted a fruit or vegetable and could not believe the difference in flavor in comparison to the conventional ones we find in our local supermarkets in North America. This year, I decided to gift myself “The Year of YES”. Saying yes to new possibilities, new adventures, new projects that take me out of my comfort zone and opens up my space to further cultivate and grow. Whatever comes my way, I’m ready to roll with it! Of course, some of my “yes” decisions that will take place this year have had a bit of planning and were well thought out, but some were spontaneous (like my engagement in 2014) that will lead to two people walking down the aisle and saying a big “YES” this upcoming spring… I get goose bumps just thinking about it!

This recipe calls for milk (your choice), I happen to have oat milk freshly made so I warmed it up on the stovetop on low heat while infusing it with cinnamon quills. Impressive! Well, wait it gets even better. Once my oat milk warmed up, I added my sprouted quinoa and topped it off with finely sliced asian pears, golden berries, red currants, dried rose petals, mint and black sesame seeds. Hmm…. Did I win you over?
