Seattle, the Pacific Northwest’s Emerald City. Home of the Space Needle and Public Market as well as the birthplace of grunge music and Starbucks. This city by the sound is beautiful, lush and a hub for delicious eats. It’s a bustling town of hip and young folks and families, who have built a green and veg friendly metropolis. Seattle is jam packed with special diet friendly options so I’ll be splitting up this town into 3 posts so as to keep from writing a novel! Let’s get started!!
For the week I was in town, I was lucky enough to be able to stay at downtown’s greenest hotel, the Hyatt Olive 8. The first LEED certified hotel in the city, the Olive 8 is a model for eco chic accommodations. Boasting an award winning spa, a fabulous local fare eatery and bar, an indoor salt water pool, rooftop garden and even hypo-allergenic rooms, Hyatt has outdone itself, making sure that every possible detail is beneficial to its guests as well as the environment. I loved the green details of my room such as the room key controlled lights and in-room recycle bins as well as the full scale gym and fantastic service. Dinner and drinks at Urbane was an extra special treat as everything on the menu is locally sourced and features Washington state wines and brews. Oh, and the eatery is totally eco as well as floors made from reclaimed wood from an old bridge and other neat eco accoutrement. The staff is more then willing to accommodate special diet diners and there is even plenty to choose from on their regular menu. Fresh, green and stylish, the Hyatt Olive 8 is the epitome of eco-luxury. I’m definitely staying here every time I’m in Seattle!
If you’re looking for a casual, yet healthy and tasty meal, any time of the day, Chaco Canyon Organic Cafe is the place for you. With 2 locations, Chaco is a haven for special diet diners who want to grub. A giant menu complete with fresh juices, desserts, salads, sandwiches and brunch items, there’s plenty to choose from, no matter what your tastes are. They have tons of raw food goodies and gluten free so I tried items from each of those categories. Their raw enchiladas are to die for and their gluten free french toast is scrumptious. In their U district location, they have a stone wall that showcases all of the people in the community that came together to make that particular location possible. So friendly, so fun and so fresh, Chaco Canyon is a great decision for any meal!
Gastropubs are all the rage and I think I found one of my faves. Located in the original brewery and bar location, Georgetown Liquor Company boasts the same name as it has for over 100 years. In a building full of history in a hip, artsy neighborhood south of downtown called Georgetown, you’ll find this insanely awesome gem of a bar. A bar that makes hand muddled specialty drinks along with old classics and serves up some of the best bar food I’ve ever had. And with that, I declare that I think I died and went to heaven when I sunk my teeth into their vegan french dip sandwich, known as The Picard. The entire menu names it’s delicacies after Sci-fi movies and its characters as the owners mixed all of their passions into their food and booze endeavor. I recommend that when visiting Seattle, get off the pane and head directly to Georgetown liquor Company for a drink and a Picard!
I love breakfast, big or small and Bouteloua Bakery is the place for just the place for a sweet and/or savory treat be it am or pm. Located in Ballard, this adorable bake shop is the pride and joy of a botanist turned vegan baker. Offering fresh, vegan and organic baked goods along with local coffee and tea, you’ll have a tough time choosing just one goody. So I chose a few! I had to have their signature pain au chocolat (chocolate filled croissant) along with her savory Field Roast Sausage croissant. I enjoyed my morning pastry with some fresh squeezed OJ as well as a french pressed cup of local island coffee and wished that Megan, the owner and baker, would just move in to my house and bake for me every day ; ) Pop in for a personal treat or to buy her out to blow your co-workers’s minds at the office, grab a sandwich on freshly baked bread or buy a loaf to last you the week. Either way just go on an empty stomach and maybe walk there and back to burn off the calories!
For a fancy pants dinner with an organic and eco twist, dine at Tilth. New American cuisine prepared with the finest ingredients from local, certified organic farmers, it’s no wonder that this certified organic, sustainable restaurant was named one of the best new restaurants in the country by The new York Times in 2008. With James Beard award winning chef, Maria Hines, at the helm, you’re sure to get a top notch meal. While it’s not a vegan restaurant, they offer a dedicated vegan menu as well as incredible vegetarian tasting menus. The vegan menu sounds as beautiful as it looks and changes seasonally so if you’re itching to try their awesome menu, reservations are suggested for dinner a well as brunch. Cute, cozy, delectable and eco; who could ask for more when it comes to a memorable meal?
And with that, I’ve barely scratched the surface on the jaw dropping tastes of Seattle. More to come next week so come hungry!

Raise The Roof Kenya

“Never doubt that a small group of thoughtful, committed citizens can change the world. Indeed, it is the only thing that ever has.” - Margaret Mead
Holly Bantleman is an adventurer. Young, vibrant and looking for something new, Holly decided to start what many of us have dreamed about, embarking on an around the world trip. She was searching for that “life changing experience.” At times, we all wonder if travelling will mould us into stronger, more aware people. Holly decided to find out for herself and set out to see what the world had to offer. Little did she know, that this idea would take her into a journey that she could have never expected.
Holly enjoyed the first year of travelling. After visiting many countries and having many new experiences, she decided to make the trek to Kenya. Something was missing and perhaps Kenya had the answer.
After arriving in Kenya, Holly heard about a village in the town of Nakuru. Nicknamed “London”, Holly decided to visit it, after all, she was from London England herself. As Holly peered into the “village” named after her city, she was stunned to see that this actually a literal dump site. The electoral violence between 2007 and 2009 in Kenya had displaced over 250 people to a landfill. These families lived on rubbish. They survived off of the waste of others.
The repugnant smell of garbage and feces was overwhelming. These displaced people rummaged through the seas of waste in an attempt to find food. Stunned, Holly was approached by many children with bright smiles. Families were very hospitable and showed Holly their makeshift homes made of plastic on top of the dump. She noticed that they had even taken the time to decorate their individual homes with tin cans and plastic flowers. Children would make toys out of rubbish and the women happily weaved beautiful bags out of discarded plastic. AIDS is rampant amongst the people, often passed to children from the breast milk of their mothers. The dark shadow of poverty enveloped these kind humble people. This was their life, this was reality and Holly found herself right in the middle of it all.
While most people would have turned around and left the landfill without looking back, Holly accepted this challenge, which was how “Raise The Roof Kenya” was born. Originally, “Raise The Roof Kenya” was created to provide more adequate housing for those living in “London.” Holly, a photographer by trade flies on her own expense to Kenya with her team and build more adequate housing. She wants to buy land so she can relocate the community so they can live in a safer area. Holly knew that she could provide even more, therefore, Raise The Roof Kenya expanded to making the overall lives of Kenyans a little easier.
From sponsoring children in the area, to encouraging our communities to host parties and fundraisers, Holly and her team can do it all. THINK BIG is one of her many projects, aiding specifically to older children. Holly recognized that there is hardly any funding for older children. Unfortunately with no skill set or tools, children often turn to prostitution or selling drugs in order to survive. Think Big provides these children with a simple home and a school to teach them a skill set in order to find work other then the horrible atrocities of the streets.
Another important and successful project is Holly’s BRA campaign. Women all over the world can donate their used bras so Raise The Roof Kenya can provide adequate support for Kenyan women. From sizes A to E, bras of all shapes and sizes are needed! Having a proper bra can lower extreme back pain and allow Kenyan women to work more effectively and care for their families.
Bantleman has also organized a hike to the top of Mount Kenya. You can join her to hike into the New Year or donate to her cause. All of the proceeds go to Raise the Roof Kenya and helping these inspirational yet impoverished people.
A few short years ago, Holly set across the world to find herself. Today, she is the owner and operator of a charity helping those who are most in need. Seeing the hospitality of those in “London” humbles all of us. Those who usually have next to nothing give the most. Holly Bantleman is the perfect example of a person who rose to the challenge to help those most in need. It is evident that to truly find yourself, you must help others. Holly rose to the occasion and her hard work and determination have helped others find themselves as well. One person can truly make a difference, with an open heart and open mind. Sometimes new experiences to come to us, rather then searching for the experience we want.
Henry Wadsworth Longfellow was quoted as saying, “The life of a man consists not in seeing visions and in dreaming dreams, but in active charity and willing service.” Holly rose to the challenge by “raising the roof” for displaced persons in Kenya. It only takes one person’s determination to make a huge difference for so many.
If you are not able to join her in her charitable visits to Kenya you can donate to this UK based charity:

The battle within us

For so many years I walked around with an enormous Psychological and Sociological residue, firmly believed that there was no way back for me. I sit here today typing, in the knowledge that the battle within myself is almost over.
This is by far the battle you struggle with; it’s so hard to make headway.
You can’t hide from your thoughts; equally you are unable to lie to yourself.
For the world around us, it’s so easy to think that we are over the worst. People ask how you are; you say fine but are we conditioned to answer that way.
Would they really want to hear the truth? Or are they conditioned to ask?
This is unintentional on their part, they can’t see what we are unhappy to reveal.
So here is the big question. Do we love ourselves?
Do we feel we command respect?
This is the place we have to start by putting one foot in front of the other, once done; the battle within you will have been won……
There’s a fine line writen by Teresa Joyce
