One of my favorite ways to spend my time is to meet up with friends to enjoy picnics and walks in nature while catching up on our week’s events. Near our home, we have the loveliest trail that is 9KM long surrounded by magnificent scenery. Trees that bend inwards and look as though that they are about to give you the biggest hugs, birds chirping and a light breeze that whispers softly as it moves through the leaves overhead. Ever since we moved in our new home, I spent much of my evenings and weekends being in nature. We didn’t get that in the bustling downtown core and you really needed to make the time to get away. Here, I just step outside and hear the sound of stillness. Peaceful, serene sound of nature bringing a calmness into my inner core.
On the side of this beautiful trail, you can find passageways that take you into secluded nooks surrounded by trees. It is in these off the beaten path small openings that you can park yourself on a blanket and enjoy a picnic in pure bliss captivated by the view around you. On this late summer day, my friend Cindy and I gathered our breakfast goodies and headed out for a very berrylicious picnic. After our stroll on the trail, we entered a little gem of paradise to relax for the morning and eat our delicious breakfast.
This is a super easy breakfast recipe and one that I love making when I am having friends or family stay with us overnight. You can soak your oats overnight in water with a bit of coconut oil and some lemon juice. The reason why soaking is so important is because all grains contain phytic acid (an anti-nutrient that binds to minerals like zinc and iron to slow down their absorption) and soaking helps brake them down and neutralize the phytic acid releasing the beneficial nutrients. This is essential for proper digestion. Soak oats in a bowl and then cover them with water, place them on the kitchen counter and head to bed. In the morning, all the ingredients are added to finish off this super easy breakfast.
- 1 cup overnight soaked oat groats
- ½ tsp. coconut oil
- 2 tbsp. lemon juice
- 2 cups warm water
- 2 cups of oat milk
- 1 cup blueberries
- 1 cup raspberries
- ½ cup currants
- 4 tbsp. hemp seeds
- 2 tbsp. almond slices
- ¼ cup hazelnuts
- dash of raw vanilla bean powder
- dash of cinnamon
- In a large bowl, soak the oats in warm water with coconut oil and lemon juice, overnight (6-8 hours).
- Drain, rinse and add the oats to bowls.
- Add blueberries, raspberries, currants, hemp seeds, almond slices, hazelnuts, vanilla, cinnamon and oat milk.
